Chicken Soto Collagen Recipe

All you need is:
- 150 gr chicken breast or thigh
- 600 ml water (for broth)
- 1 stalk lemongrass (bruised)
- 2 kaffir lime leaves
- 2 cm galangal (bruised)
- 2 cloves garlic, minced
- 3 small shallots, sliced
- 1 boiled egg, halved
- A handful of vermicelli (soaked in hot water until soft)
- Bean sprouts (optional)
- 1 tbsp cooking oil
- Salt & pepper to taste
- 1 sachet or scoop (5 gram) of Collabit Pure Marine Collagen
- Optional toppings: lime wedges, sambal, fried shallots, celery leaves
Steps to make:
- Boil chicken in water until cooked, then shred the meat. Keep the broth.
- Heat oil in a pan, sauté garlic and shallots until fragrant.
- Add lemongrass, galangal, and kaffir lime leaves. Stir briefly.
- Pour the sautéed spices into the chicken broth, add salt & pepper. Let simmer for 5–7 minutes.
- Prepare a serving bowl with vermicelli, shredded chicken, and bean sprouts.
- Pour hot broth over the bowl. Add half a boiled egg on top.
- Sprinkle in Collabit Pure Marine Collagen and stir until dissolved.
- Add fried shallots, celery, a squeeze of lime, and sambal if you like it spicy.
